HERBY LEG OF LAMB

Ingredients: (SERVES 6)

Leg of Lamb (Typically 2kg)

20g Rosemary 

4 Cloves of Garlic

Salt 

Pepper

Olive Oil

Method:

STEP 1: Pre-heat the oven to 180°C. Roughly slice the garlic, rip up the rosemary and score your lamb leg in criss cross.

STEP 2: Stick the rosemary and garlic in the openings of the meat that were made when scoring. Season well with salt and pepper and drizzle some olive oil across the meat. ​

STEP 3: Place into the oven for about 1hr 15 minutes if you want it pink, or 1hr 3o minutes if you like it a bit more well done. 

STEP 4: Once cooked remove from the oven and leave to rest for a good 15-20 minutes. When rested, carve and then serve.
