Method:
STEP 1: Pre-heat the oven to 180°C. Roughly slice the garlic, rip up the rosemary and score your lamb leg in criss cross.
STEP 2: Stick the rosemary and garlic in the openings of the meat that were made when scoring. Season well with salt and pepper and drizzle some olive oil across the meat.
STEP 3: Place into the oven for about 1hr 15 minutes if you want it pink, or 1hr 3o minutes if you like it a bit more well done.
STEP 4: Once cooked remove from the oven and leave to rest for a good 15-20 minutes. When rested, carve and then serve.
